Freshen up your sides with this healthy and flavorful Grilled Caribbean Plantain Salad. Often mistaken for bananas, plantains have a slightly fruity taste with less sweetness, making them the perfect accompaniment for savory flavors. The plantains are grilled until caramelized, then tossed with protein-rich beans, tomatoes, jicama, mango, avocado and fresh lime juice.
To accentuate the sweetness of the salad, we recommend using the light smoke from Apple Hardwood Pellets while grilling the plantains.
To add a protein to the salad, grill some jumbo or large shrimp.
