Ingredients


6 Artichokes

3 tbsp Lemon Juice

To Taste, Lemon Pepper Garlic Herb Seasoning

1/2 tsp Lemon Pepper, Garlic and Herb Seasoning (for Sauce)

1 Lemon, juice & zest

3 tbsp Mayonnaise

3 tbsp Olive Oil

3 tbsp Sour Cream

Artichokes are truly a delicacy in the vegetable world, and they’re easy to make despite their intimidating appearance. These Roasted Artichokes are roasted on the grill until tender, smoky and caramelized. Serve with a creamy lemon-infused dipping sauce for a unique and mouthwatering appetizer or side.

Wood Pellet Recommendation

In order to bring out the tangy flavors in this recipe, we recommend using our Pennsylvania Cherry Hardwood Pellets.

Note: This recipe uses Louisiana Grills Lemon Pepper Garlic & Herb Seasoning.

  1. Fire up your Louisiana Grills pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 425° F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. In a large bowl, whisk together the olive oil, lemon juice, and Lemon Pepper Garlic & Herb. Set aside.
  3. Prep the artichokes: trim ¼ to ½ inch off the bottom of the stem. Peel the stem to remove any thick, fibrous strands; then peel the thick, outer leaves. Cut off the top of the artichoke, then slice the artichokes in half lengthwise. Remove the thistle, if desired, then add to the citrus oil. Toss well to coat, then repeat with remaining artichokes.
  4. Transfer halved artichokes to the grill, cut-side down. Roast for 15 minutes.
  5. While the artichokes are roasting, prepare the dipping sauce: in a small mixing bowl, whisk together the mayonnaise, sour cream, lemon zest and juice, and Lemon Pepper Garlic & Herb seasoning.
  6. Remove artichokes from the grill and serve warm with dipping sauce.

Tips:


Artichokes can be tricky to clean, as they are delicate, yet fibrous. If oxidizing/browning starts to happen prior to coating in citrus oil, have a small spray bottle with lemon juice handy, and spray as needed.
