Leftover Pulled Pork Hash with Eggs

1 teaspoon coarse Black Pepper

4 Eggs

1 Green Bell Pepper, Diced

1 teaspoon Kosher Salt

3 tablespoons Olive Oil

1 small Onion, Diced

1 Tablespoon Pit Boss Hickory Bacon Seasoning

2 cups of leftover Pulled Pork

1 Red Bell Peppers, Diced

1 ½ pounds Red Potatoes, Diced

Cooking Instructions

Take sweet and juicy pulled pork, and turn it into the perfect meal for breakfast, lunch, or dinner. With roasted diced potatoes combined with the savory addition of diced bell pepper and onion, this hearty Pulled Pork Hash gets even more bossin’ with two sunny side eggs, smoked right on top.

  1. Start your grill on “smoke”. Once it’s fired up, set the temperature to 350°F.
  2. In a large bowl, toss the potatoes with 2 tablespoons of olive oil and Hickory Bacon seasoning. You want to get the potatoes coated well and evenly with the oil and seasoning.
  3. Add the potatoes to the skillet and cook on the grill for 12-15 minutes or until they’re cooked all the way through and browned. Remove from the pan and set aside.
  4. Add 1 more tablespoon of olive to the pan and cook the peppers and onion for 2-3 minutes or until soft. Remove from the pan and set aside.
  5. Add the pork to the pan and cook until warmed through. Because the pork is already cooked this should only be 1-2 minutes so the meat stays moist.
  6. Add the potatoes, peppers and onions back to the pan, then give everything in the skillet a quick mix, so the hash is evenly blended.
  7. Crack the 4 eggs on top of the hash. Try to space them evenly around. Sprinkle the teaspoons of salt and pepper on top of the eggs, then place the lid on top of the pan and allow the eggs to cook for 5-6 minutes, or until the whites are firm and the yolks are still runny.
  8. Remove from the grill and serve immediately.
