Smoky, sweet and savory, these Brussel Sprouts with Pancetta and Cranberries are a wonderful side dish for your holiday table. Made entirely on the pellet grill, the Brussel sprouts are seared in a cast iron skillet until lightly charred, then tossed with crispy pancetta, caramelized onions, and fresh cranberries for a pop of flavor. The combination of sweet and savory flavors will make even the Brussels sprouts doubters believe.

Note: It is recommended to use Pennsylvania Cherry Hardwood Pellets with this recipe.

  1. Fire up Louisiana Grills pellet grill and preheat to 425° F. If using a gas or charcoal grill, set it for medium-high heat. Place a large cast iron skillet on grill and let preheat.
  2. Place cast iron pot on the grill. Add 4 cups of water, cover, and bring to a boil. Add Brussels sprouts and salt. Boil for 3 minutes until vibrant green. While sprouts are boiling, add pancetta to preheated skillet and stir. Continue to cook, stirring occasionally.
  3. Use a slotted spoon to transfer Brussel sprouts to a cutting board and remove the pot from grill. Halve each sprout using a knife and place directly on grill grates, cut side down. Grill to 3-5 minutes per side.
  4. Remove pancetta from skillet and transfer to a paper towel-lined plate. In same skillet, add butter and onion. Sauté for 3 minutes, then add cranberries. Allow to cook until berries begin to burst, stirring occasionally, approximately 10 minutes.
  5. Remove Brussels sprouts from grate and to skillet with cranberries and stir. Add reserved pancetta and continue to sauté another 2 minutes. Remove from grill and serve hot.
