Ingredients


2 tbsp Apple Cider Vinegar

3 Bacon Slices, chopped

1 bay leaf

3 lbs Beef Short Ribs

2 cups Beef Stock

2 carrots, diced

1 Dill Pickle, minced

2 tbsp Flour

3 Garlic Cloves, Minced

1 tbsp Parsley, Minced Fresh

2 cups red wine

To Taste, Steak Seasoning

1 Yellow Onion, chopped



Cooking Instructions


Fall-off-the-bone tender, these luscious German-Style Short Ribs are the perfect hearty comfort food. Braised low and slow on the grill, the short ribs are cooked in a German-style sauce with bacon, aromatic veggies, dill pickle, red wine and apple cider vinegar. The result is fall-apart beef in a rich and flavorful gravy that’s perfect for serving over spätzel green beans, egg noodles or red potatoes.

  1. Fire up your Louisiana Grills pellet grill and with the lid open, set your temperature to SMOKE mode.
  2. Once the fire is lit, preheat to 400° F. If using a gas or charcoal grill, set it up for medium-high heat. Set a cast iron Dutch oven on the grill and let it preheat.
  3. Add the bacon to the Dutch oven and sauté the bacon, until the fat is rendered. Remove the bacon bits with a slotted spoon, set aside.
  4. Season the short ribs, then brown them in the hot bacon fat. Remove the ribs once browned, then set aside.
  5. Add the onion and carrot to the pot, and sauté for 3 minutes, until onions are translucent. Stir in the garlic, pickle, and reserved bacon. Add two tablespoons of flour to the pan and sauté for 1 minute. Add the red wine, simmer and reduce by half.
  6. Add the bay leaf, vinegar, and beef stock to the pot, then add the browned short ribs.
  7. Cover the pot with a tight fitting lid, then reduce the grill temperature to 325 F. Braise the short ribs for 3 to 3 ½ hours, until tender.
  8. Remove the short ribs from the grill and serve warm with spätzel, sautéed green beans, braising jus, and minced parsley.
