1 pound trimmed of abductor muscles Scallops

1 tablespoon Champion Chicken Seasoning

These Seared Lemon Butter Garlic Scallops are a delicious and impressive entrée to serve at your next dinner! Whether it’s for a special someone or simply a dinner to impress your guests, these Seared Lemon Butter Garlic Scallops are sure to delight! Make juicy, restaurant worthy scallops, with a delicious hint of smoke from the pellet grill. This is a meal that will have people talking for a long time!

  1. Fire up your Louisiana Grill, and set the temperature to 400˚F. If using a gas or charcoal grill, set it up for high heat.
  2. Place the cast iron skillet on the grill and allow it to preheat.
  3. Rinse the scallops under cold water and pat completely dry.
  4. Once the scallops are dry, add the canola oil to the cast iron pan, and place the scallops in a single layer in the pan. Insert a temperature probe into one of the scallops.
  5. Sear the scallops on both sides, about 1-2 minutes per side. Once the scallops are golden brown and have reached an internal temperature of 130˚F, add the butter, garlic, lemon juice, Champion Chicken Seasoning and parsley to the pan and spoon over the top of the scallops. Remove the cast iron pan from the grill as soon as the butter melts and serve immediately.
