Wood Pellet Recommendation

In order to bring out the bacon-flavors in this recipe, we recommend using our New England Apple Hardwood Pellets

Note: This recipe uses Louisiana Grills Smoked Apple Chipotle Rub Seasoning

  1. Fire up your Louisiana Grills pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 375° F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. Heat a cast iron skillet and sauté bacon for 8 to 10 minutes, stirring occasionally, until crisp. Remove bacon with a slotted spoon, and transfer to a bowl. Add asparagus and onion to the rendered bacon fat, season with Smoked Apple Chipotle, and sauté for 2 minutes.
  3. Deglaze the pan with lemon juice, then add mixture to the bacon bits. Stir to incorporate.
  4. Meanwhile, roll out puff pastry, and cut into 24 pieces. Transfer cut pastry to a mini muffin tin, then fill each with a square of brie, bacon and asparagus mixture.
  5. Place on the grill and bake for 15 to 18 minutes, until pastry is puffed and golden.
  6. Remove bacon asparagus bites from the grill and serve warm.
