Cooking Instructions

Moist, chewy and filled with rich coconut flavor, these coconut macaroons are an easy cookie that can be baked right on your pellet grill. Shredded coconut flakes are folded into a luscious mixture that gets added richness from our Maple Walnut Seasoning. The cookies are baked on the grill to infuse delicious wood-fired notes and a crispy and golden exterior. Bonus: for added flavor, dip in your favorite melted chocolate before serving.

Wood Pellet Recommendation

In order to bring out the sweet flavors and add an extra layer of depth, we recommend using our Pennsylvania Cherry Hardwood Pellets.

Note: This recipe uses Louisiana Grills Maple Walnut Seasoning.

  1. In a mixing bowl, whisk together the sweetened condensed milk, coconut extract, vanilla extract, and Maple Walnut seasoning. Incorporate the flour ⅓ cup at a time, then fold in the coconut flakes. Mix well.
  2. Refrigerate coconut mixture for 1 hour.
  3. Meanwhile, line a baking/pizza stone, or large cast iron skillet with parchment paper.
  4. Fire up your Louisiana Grills pellet grill on SMOKE mode and let it run with lid open for 10 minutes then preheat to 350° F. If using a gas or charcoal grill, set it up for medium heat.
  5. Use a small cookie dough scoop to portion out 18 to 24 macaroons onto the parchment-lined baking stone. Transfer to the grill and bake for 18 to 20 minutes, until golden.

For a gluten-free cookie, substitute ⅔ cup all-purpose flour with ⅔ cup almond flour.
