Grilled Plantain Salad


1 Avocado, diced
1 cup Cherry Tomatoes, Halved
1/2 cup Cilantro, Chopped
2 tbsp Coconut Oil
To taste Cracked Black Pepper
2 tbsp Grapeseed Oil
2 tsp Honey
1 tbsp Jalapeno Pepper, minced
1/2 cup Jicama, diced
To taste Kosher Salt
1 Lime, Juiced
1/2 cup Mango, diced
2 Plantains, peeled and halved
14 oz Red beans, drained
2 tbsp Red Onion, minced

Cooking Instructions

Freshen up your sides with this healthy and flavorful Grilled Caribbean Plantain Salad. Often mistaken for bananas, plantains have a slightly fruity taste with less sweetness, making them the perfect accompaniment for savory flavors. The plantains are grilled until caramelized, then tossed with protein-rich beans, tomatoes, jicama, mango, avocado and fresh lime juice. 

Wood Pellet Recommendation 

To accentuate the sweetness of the salad, we recommend using the light smoke from Apple Hardwood Pellets while grilling the plantains.

  1. Fire up your Louisiana Grills pellet grill and preheat to 350°F. If using a gas or charcoal grill, set it up for medium-high heat.
  2. Brush plantains with coconut oil, then place directly on grill grate, sear slide open. Cook 1 to 2 minutes per side, then remove from grill and cool for 10 minutes, then cut into ¼ inch slices.
  3. In a large mixing bowl, combine red beans, tomatoes, Jicama, mango, red onion, and jalapeño. Set aside.
  4. In a small mixing bowl, whisk together lime juice and zest, grapeseed oil, honey, salt, and pepper. Pour dressing over bean mixture, then gently toss in grilled plantains, followed by avocado and cilantro. Serve immediately.
