A twist on the traditional Scotch egg, this version features soft boiled eggs wrapped in sausage and bacon then smoked to perfection. This keto-friendly appetizer or snack has an unexpectedly tender center with a crispy, smoky exterior.  

What are Scotch Eggs? 

A popular picnic and gastropub food in the UK, the Scotch Egg is a complex combination of soft-boiled eggs wrapped in sausage, breaded and deep fried.

  1. Fire up your Louisiana Grills pellet grill and preheat to 250°F. If using a gas or charcoal grill, set it up for low, indirect heat.
  2. Bring a pot of water to a boil, then gently set eggs in the pot and boil for about 6 minutes for a soft-boiled egg.
  3. Prepare an ice water bath, then drop eggs in for 5 minutes to prevent further cooking.
  4. Carefully peel the eggs, then wrap 1 ounce of breakfast sausage followed by half slice of bacon around each egg.
  5. Place bacon wrapped eggs on a cast iron skillet and set skillet on grill. Close grill lid and cook for 40 to 45 minutes.
  6. If crisper bacon is desired, remove skillet from grill then place under oven broiler for 3 to 5 minutes to slightly crisp bacon. Serve warm.

Tips:


Before wrapping the eggs, lay the sausage on plastic wrap and press until it is flat. This will make it easier to handle and wrap around the eggs.
