This creamy smoked polenta is warm, silky, comforting, and the perfect complement to any dish. Similar to grits, polenta has a soft creamy texture that becomes luxuriously smooth with the addition of butter and milk. In this twist on the Italian staple, the cornmeal is smoked dry then cooked right on the pellet grill to absorb the delicious wood-fired flavors. Topped with toasty browned butter and crispy sage leaves, serve this cozy side with braised short ribs, shrimp, or roasted vegetables for a hearty meal.

Is Polenta Gluten Free?

This Smoked Polenta recipe is made from cornmeal which is maize (corn) that is ground into a fine flour. Corn contains no gluten so most polenta is gluten free. Some recipes or products may use wheat products as a filler, but this recipe does not.
